GF Chicken Nuggets

COOK TIME: 10 MIN PREP TIME: 10 MIN TOTAL TIME: 20 MIN SERVINGS: 4

INGREDIENTS

  • 1.5-2 lbs of chicken (can use thighs or breast) – fat trimmed and cut into small pieces

  • (trick, I like to use the big half of a thigh to grill and trim off the smaller pieces for

  • nuggets)

  • 1 cup of almond flour (may need more)

  • 1 tsp salt (stir into almond flour in a bowl)

  • 2 eggs whisked in a bowl (may need more)

  • Stainless steel pan with avocado oil coating the bottom in a decent layer

instructions

  • Dip each nugget piece into the egg, then the almond flour, and add to hot sizzling oil (usually

  • low/medium heat is enough to get a good temp going)

  • Cook each piece about 3-4 min per side till golden and crispy. Ensure internal temp is

  • 165 before removing.

  • Replace oil after a few rounds if it gets too blackened.
