GF Chicken Nuggets

INGREDIENTS
1.5-2 lbs of chicken (can use thighs or breast) – fat trimmed and cut into small pieces
(trick, I like to use the big half of a thigh to grill and trim off the smaller pieces for
nuggets)
1 cup of almond flour (may need more)
1 tsp salt (stir into almond flour in a bowl)
2 eggs whisked in a bowl (may need more)
Stainless steel pan with avocado oil coating the bottom in a decent layer
instructions
Dip each nugget piece into the egg, then the almond flour, and add to hot sizzling oil (usually
low/medium heat is enough to get a good temp going)
Cook each piece about 3-4 min per side till golden and crispy. Ensure internal temp is
165 before removing.
Replace oil after a few rounds if it gets too blackened.
