INGREDIENTS

  • Bunch (or two) of lacinato kale, well-washed, de-stemmed, and roughly chopped

  • One avocado

  • Handful of pomegranate seeds (about half a pomegranate’s worth)

  • Chopped pistachios (salted or unsalted, I like salted)

  • One chopped Honeycrisp apple (or apple of your choice)

DRESSING (add all ingredients in bowl + mix)

  • 1 tablespoon olive oil

  • 1 tablespoon honey

  • 1 tablespoon Dijon

  • 2 tablespoons apple cider vinegar

  • Juice of whole lemon

  • 1 tablespoon sesame oil

instructions

  • Add kale, massage into dressing with hands for a minute or so

  • Add the rest of the ingredients on top.

  • Feel free to mix and match other ingredients.

  • Finish with salt & pepper
