Oma’s immunity soup

COOK TIME: 30 MINS PREP TIME: 10 TOTAL TIME: 40 MIN SERVINGS: 4

INGREDIENTS

  • 6 carrots peeled

  • 1 container of chicken bone broth (4 cups)

  • 1 can of light or full-fat coconut milk

  • 1 can of pumpkin (optional but nice add for thickness)

  • 4 inches of peeled and sliced fresh ginger

  • 3 cloves garlic, peeled and sliced

  • 1 tablespoon turmeric

  • - S & P to taste

  • - Onion and celery are also optional to add

  • instructions

  • Add all ingredients to a simmer pot and bring to a boil. Let simmer for 20-30 minutes until the carrots are fork-tender

  • Using an immersion blender, blend until smooth. Might wait until less hot so as not to burn oneself!

  • Top with pumpkin seeds if desired, or olive oil and additional S & P
